I’m not keen on the Summertime. I hate the heat. But there are a few things I look forward to, besides spending time and having fun with the family. Main dish dinner salads are one of them. I start to crave things like shrimp salad with green goddess dressing, as well as fruit desserts (recipes coming soon!) and fresh, creative sandwiches (Yep, those are coming soon as well!). This salad couldn’t be simpler. I even simplified a court bouillon (shrimp poaching liquid) so that anyone could do it with things usually found in the fridge. Poached shrimp doesn’t have to be fussy to taste fabulous, and this recipe is proof.
I paired the salad with my deliciously fresh green goddess dressing. This stuff is addictive! You’ll find yourself searching for things to slather with it.
This salad is also versatile. I added grape tomatoes, hothouse cucumbers, avocados, and feta cheese this time, but your additions are only limited by your imagination. In the past, I’ve added homemade croutons, different types of cheese, extra chives, and various veggies. I’ve also changed up the salad greens to include arugula, little gems, butter lettuce, mache, or watercress. You could even put a fruity spin on things and add grapes or grilled peaches /nectarines!
However you make your shrimp salad, try it soon. It’s refreshing, delicious, and surprisingly satisfying with some good crusty bread.
