When Summertime comes around, I crave some things more than others: barbecued anything, fruit desserts, watermelon, and these pulled pork sammies with queso fresco, coleslaw (with my homemade creamy honey-dijon dressing), and avocados on a fresh bun or roll. There aren’t many combinations as delicious as this one. The cool freshness of the coleslaw counteracts the smoky flavor of the pork, and the creaminess of the avocado and the queso play perfectly with everything.
I recently posted recipes for my coleslaw with creamy honey-dijon dressing and pulled pork two ways. Use these two links to bring this dish together. You’ll find that once you make coleslaw with a homemade dressing, you’ll never go back to store-bought!
And my pulled pork is the next best thing to using a smoker! It slow roasts in the oven, but it’s super simple, and takes almost no watching – just marinate, slice a couple of onions, and shove everything in the oven. Hours later, you’re ready to shred the pork. I defy you not to sneak a million nibbles as you’re pulling and shredding the delectable morsels of meat!
Mix the shredded pork with some of your favorite barbecue sauce, throw together the coleslaw ingredients, and you’re ready to make these sammies! Your family will love them, and party guests will go nuts! I hope you make these soon. Enjoy!
