Ingredients
  • 3/4cup mayonnaise
  • 1tbsp dijon mustard
  • 2tbsp honey
  • 1/4cup rice vinegar
  • 2-3cloves garlic, minced (to taste)
  • 1cup oil of choice
  • salt and pepper to taste
  • 7 1/2 cups or 1 pound coleslaw (thinly sliced cabbages of choice, matchstick cut carrots, etc., or store-bought variety)
  • 6 sliced green onions
Instructions
  1. Mix first 7 ingredients with a whisk in a large, non-reactive bowl. Toss with coleslaw and green onions. Refrigerate for at least half an hour.
  2. When using coleslaw, scoop up with perforated spoon or tongs, so as to leave behind some of dressing. Coleslaw will not get soggy, and it is preferable to leave it macerating in dressing until use – but it is necessary to leave some dressing behind when serving final product, otherwise coleslaw will be too wet.
