Sometimes, you just need to throw a bunch of stuff on a pan and throw it in the oven. But that doesn’t mean you want to sacrifice on flavor. That was me last week. I had a package of chicken thighs, a jar of sun-dried tomatoes, a can of chick peas, a small potato, and some herbs and spices (mainly turmeric, salt and pepper). I tossed everything onto a sheet pan, drizzled it with olive oil, salt and pepper, and 40-45 minutes later, I had dinner!
You can’t get any easier than this dish. While it’s baking, make a quick salad, and if you like, make some rice or couscous to go along. Tear off a piece of good bread to sop up the juices, and Bob’s your uncle – dinner in a flash!
